Healthy eating does not mean you can’t eat yummy foods! Shepard’s Pie 1 cup low sodium beef broth + 1 tsp unflavored gelatin 1 tbsp olive oil 1 cup chopped onion 1/2 cup chopped carrots 1/2 cup chopped celery 3 cloves garlic 1 lb extra lean ground beef 2 tbsp all natural tomato paste 1 tbsp Worcestershire sauce 1 tsp dried thyme 1/2 tsp sea salt 1/4 ground black pepper 2 cups frozen green beans 2 tsp cornstarch + 2 tsp water 2 cups mashed sweet potatoes (2 cups cubed sweet potatoes mashed, 1/4 cup almond milk, 1 tsp ghee, 1/2 tsp sea salt and 1/4 tsp ground black pepper) 1) Preheat oven to 425 degrees 2) Combine broth and gelatin, set aside. 3) Heat oil in large skillet over medium high heat. 4) Add onion, carrots, and celery stirring frequently for 3-5 minutes. 5) Add garlic, stir frequently for 1 minute. 6) Add beef, stirring frequently for 4-5 minutes or until lightly brown/cooked through. 7)Add tomato paste, stirring frequently for 2 minutes. 8) Add broth mixture, Worcestershire sauce, thyme, salt, pepper, green beans and bring to a boil. Reduce to low heat. 9) Add cornstarch slurry, gently boil, stirring constantly for 1 minute, remove from heat and set aside. 10) Transfer beef mixture to an 8x8 casserole dish and top with sweet potatoes. Bake for 20-25 minutes!
