Recipe below:⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 Earnest Eats Maple Cinnamon oatmeal cup⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 cups flour (all purpose or whole wheat)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 tsp baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/2 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3/4 cup milk (or nut milk)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 1/2 tsp lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3 large eggs⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 1/4 cups pumpkin puree⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 1/4 cups granulated sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/2 cup brown sugar, packed⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1/2 cup oil (vegetable or coconut)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 can (8 oz) crushed pineapple⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup carrots, grated⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup flaked coconut⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 cup walnuts ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cream Cheese Frosting - homemade or store-bought ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Preheat oven to 350 degrees F. Grease a 9x12 cake pan. You can also use two 9 inch round pans for a layer cake, or even a cupcake pan!⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Combine flour, cinnamon, baking soda and salt in a small bowl. Combine milk and lemon juice separately. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Beat eggs, pumpkin, granulated sugar, brown sugar, oil, pineapple, carrots and milk mixture in a large kitchen mixer bowl. If you don't have a beater or mixer, use a whisk. Mix well. Gradually add flour mixture and beat until combined. Stir in oatmeal, coconut and walnuts. Pour batter into prepared cake pan. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Bake for 35 to 40 minutes or until wooden toothpick comes out clean when inserted. Let cake cool completely. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5.
